Responsibilities

  • Hire, train, and supervise food service staff
  • Produce work schedule, maintaining correct staff needs
  • Maintain HACCP or Serve Safe certification
  • Maintain working knowledge of all State and County regulations for food service safety and licensing as well as DSS and OSHA regulations for the Assisted Living Industry
  • Serve as Cook for the number of meals designated by the Executive Director
  • Demonstrate appropriate inventory planning, use preferred vendors
  • Assure correct preparation of meals using SYSCO IMPAC menu system, Diet Spread Sheets, Production Sheets, Alternative Menu Planner, and Standardized Recipes
  • Educate staff regarding menu options and ability to assist resident’s in making choices
  • Monitor and consider resident preferences when making menu choices
  • Ensure proper portions and temperature; provide appropriate condiments and verify appropriate holding procedures are being followed
  • Maintain a safe working environment, reporting potential issues immediately
  • Produce accurate reports including but not limited to; Resident Meal Summary, Food and Kitchen Temperature Logs, Dining Service Meeting Minutes
  • Maintain the Dining Room assuring cleanliness and maximum accommodation for residents and staff; complete cleaning after each meal service and proper table settings
  • Present a professional demeanor that communicates a corporate philosophy of service, goodwill, and genuine interest in each resident’s needs
  • Familiarize yourself with residents of the Community
  • Observe residents’ ability to perform daily ADL’s and social skills, communicate potential difficulties or opportunities to the appropriate team member

Qualifications

Requirements for this position are the following:

  • A minimum of two (2) years experience as a lead chef
  • Experience managing elderly and their dietary needs
  • Knowledge of food costs, budget monitoring and forecasting
